Ask around Faridabad for the city's best butter chicken and you'll hear "CHASKA" more often than not — and the story behind it goes back to 2005, when founder Sanjeev Puri couldn't find a butter chicken in the city that matched what he'd grown up eating. So he opened a kitchen and made his own. Two decades and two branches later, it's still the dish most first-time guests are told to order.
A Dish With Delhi Roots
Butter chicken, or murgh makhani, is widely credited to Moti Mahal in Delhi in the 1950s, where leftover tandoori chicken was simmered in a butter-and-tomato gravy rather than being thrown out. That original idea — tandoor first, gravy second — is still exactly how CHASKA makes it today, which is part of why it tastes closer to the traditional version than the more diluted, overly sweet versions sold at some places.
What Goes Into CHASKA's Butter Chicken
The chicken is tandoor-roasted first, not boiled or simmered raw into the gravy — that's what gives it a slight char and smokiness underneath the sauce. It's then finished in a mild, tomato-based gravy enriched with butter and cream, which is what gives the dish its signature colour and rounded, only-mildly-spicy flavour. It's built to be comforting rather than fiery, which is part of why it works for both first-timers and regulars who've been ordering it since 2005.
