What Makes Tandoor Cooking Different
A tandoor is a cylindrical clay oven that runs much hotter than a regular grill or oven — often over 400°C — which sears the outside of marinated meat or paneer almost instantly while keeping the inside tender. That's what gives tandoori food its charred edges and smoky flavour without drying it out, as long as the marination (usually yoghurt-based) has had time to tenderise the ingredient first.
